Rose Lychee Mocktail

Method

   Blend the lychees

   Blend 8–10 lychees with 3 tablespoons of their syrup until smooth. Strain through a fine sieve for a cleaner texture, or leave as-is for a thicker drink.

   Mix the base

   In a glass, combine lychee puree, rose syrup, and fresh lime juice. Stir well.

   Add ice and top up

   Fill glasses with ice. Pour the lychee-rose mixture over the ice. Top with sparkling water.

   Garnish and serve

   Garnish with a whole lychee on the rim and dried rose petals. Serve immediately.
